I love a flexible recipe, one that can be used multiple ways or with easy swaps. This summery green puree/sauce can be used in many ways, and the quantity made here means you have it ready for at least 2 meals, probably 3; use 1/2 to 1/3 in this risotto recipe, freeze the rest to make the risotto again or use in a quick pasta, even on steamed new potatoes. You can make ahead of time too, so it's ready to go when you’re cooking dinner.

You could also add some protein if you like; steamed chicken, fish or tofu.
